Here's a classic Filipino Pork Adobo recipe, Loved by Cebuano people. This version is the traditional Pork Adobe from the Visayas region.
Ingredients:
- 1 kg (2.2 lbs) pork belly, cut into 1-2 inch cubes
- 1 medium onion, Sliced.
- 6 cloves garlic, minced
- 4 bay leaf
- 1/2 teaspoon peppercorns (or ground black pepper to taste)
- 1 cup soy sauce (use a Filipino brand like Silver Swan or Kikkoman)
- 1/2 cup vinegar (preferably cane or coconut vinegar)
- 1 cup water (adjust based on how much sauce you prefer)
- 2 tablespoons brown sugar (optional, depending on your sweetness preference)
- Salt and pepper to taste
- 5 tablespoons cooking oil (for frying)
Instructions:
Marinate the Pork:
- In a large bowl, combine the pork, soy sauce, garlic, onion, peppercorns, and bay leaf.
- Let it marinate for at least 3 hrs, or Overnight will be the best.

Cook the Pork:
- In a large pan, Medium heat oil.
- Add the pork mixture and seer for 3-4 minutes until brown.
- Pour the marinate mixture until pork is soft. Simmer for 30-40 minutes.
- Once the sauce is dissolve, it will reduce to oil, and keep stirring until pork is fry.
- In a large pan, Medium heat oil.
Serve:
- Serve your Pork Adobo with white rice and a glass of Soda!
