Chicken Cordon Balls

Are tiny balls of ground chicken cooked into perfection. Fun bite size goody with a classic taste of chicken cordon bleu!. Instead of a traditional stuffed chicken breast with ham and cheese, We give it a twist of ground chicken stuff with ham and cheese and create a small ball size that fits on your mouth.
Here is my simple Chicken Cordon Balls Recipe.


INGREDIENTS:

  •     Chicken cordon balls
    • 1 kilo Chicken breast.
    • 5 pieces square ham, diced small (sweet ham is a better choice).
    • 1/2 Eden cheese, slice to small dice size.
    • 1 Cup Breadcrumbs (for extender, Optional).
    • 1 Large Egg.
    • seasonings
      • Salt
      • Pepper
      • Garlic powder
      • Cayenne powder (for some kick).
      • Old Bay seasoning (for unique taste profile Optional).

  • Breading Mixture
    • 250 grams all-purpose flour.
    • 250 grams breadcrumbs (Any of your choice).
    • 2 large eggs, beaten (add salt to taste)

  • Deep Fry
    • 1 litter of Vegetable oil (enough to make the chicken cordon balls submerged).


INSTRUCTIONS:

  • PREPARE THE CHICKEN BALLS
    • In a large bowl, Combine all the ingredient listed above excluding the cheese. 
    • Mix well until everything hold together. 
    • If mixture is still loose, add breadcrumbs 1 tablespoon at a time.
  • PREPARE THE BREADING MIXTURE
    • In a 3 separate bowls
      • Flour
      • Egg
      • Breadcrumbs

  • FORM THE CHICKEN BALLS
    • Make sure your hands are wet in oil.
    • Take a portion of the chicken mixture, punch a hold at the center to add the cheese and cover.
    •  Roll it on the flour and place it on a baking sheet.
    •  Rest for a few minutes or place it on the fridge until firm before cooking.
  • COOKING TIME
    • On a Deep pan, add the oil over medium heat.
    • Coat the balls with egg from the Breading mixture and follow with the breadcrumbs.
    • Slowly add the chicken balls by batch, do not overcrowd the pan. 
    • Cook about 3-4 minutes until golden brown and cooked through.
    • Remove from the oil and place it on a cooking rack.

  • EATING TIME
    • Serve the chicken cordon balls in a nice place with your favorite dipping sauce.
    • Mayonnaise, ketchup, mince garlic, salt and pepper is a nice combination for this little balls.
